It’s a paring knife and then a little more. First off, and most importantly, it’s very thin. 5/64” with a full flat grind. Secondary bevel is at 20° and if that doesn’t mean anything to you, well…. ok. fine. The “little more” part means that it’s a bit longer than you’re probably used to which makes it handy for all sorts of other stuff like margarita-prep and seeding peppers and also, additional margaritas. It’s big enough to be the only knife you take camping with you but small enough that you don’t question the matching chefs knife that you definitely also want.

1095 and O1 tool steel available. 5/64” stock only.
